Microstructure of [beta]-lactoglobulin/pectin coacervates studied by small-angle neutron scattering
Article Abstract:
Small-angle neutron scattering (SANS) is applied to investigate the microstructure of [beta]-lactoglobulin/pectin coacervates prepared by different initial protein/polysaccharide weight ratio, sodium chloride concentration and pectin charge density. The results reveal that the formation of protein domains in [beta]-lactoglobulin/pectin coacervates is attributed to the self-aggregation of [beta]-lactoglobulin molecules.

Molecular dynamics study of calcium carbonate in water
Article Abstract:
The molecular dynamic (MD) studies using empirical polarizable force fields are used to understand the solvation properties of the ions involved in calcium carbonate mineral nucleation. The carbonate anion forms long-living hydrogen bonds with water and shows an amphiphilic character.

Controlled calcium release in the absence and presence of an ion-binding polymer
Article Abstract:
The release of calcium via the controlled dissolution of CaCo3 by glucono-delta-lactone (GDL) is explained. Definite evidence is provided for the first time, to support the hypothesis that the presence of the pectin does not significantly influence the dissolution rate of CaCo3.
